13. Indian Butter Chicken

Ingredients:

  • 1/4 cup of pint yogurt
  • 1 teaspoon of ginger crushed
  • 1 teaspoon of salt
  • 1/4 teaspoon of red food coloring
  • 3 lb chicken
  • 2 oz butter
  • 1 cinnamon stick (1 inch)
  • 6 cloves
  • 4-5 cardamom pods
  • 1 bay leaf
  • ¼ pint sour cream
  • ¼ saffron
  • 2 teaspoons of ground almonds
  • ¼ teaspoon of cornstarch
  • 1 tablespoon of water
  • Salt to taste

Process:

  1. Mix yogurt, ginger, red food coloring and salt and next rub into the chicken.
  2. Keep it in the refrigerator entire night to marinate.
  3. Put in one ovenproof dish and then brush with oil.
  4. Bake in the oven at 375 ºC for around 40-50 minutes.
  5. Reserve this liquid, if any.
  6. Melt butter in a saucepan and sauté all these spices for one minute.
  7. Add the reserved chicken and sour cream.
  8. Add saffron, ground almonds and chicken.
  9. Dissolve cornstarch in the water and after that add to the chicken.
  10. Let thicken. Cover plus simmer for around 3-4 minutes.
  11. Remove from the heat and afterward serve with naan.
